I am a big fan of black and white photography.  All of the photos I take are taken in color but then edited in Photoshop Elements to achieve the best contrast for a good black and white image.
 
One of the classes I teach is an introduction to Photoshop Elements.  Right now I am using version 6 of this wonderful photo-editing program.  The class takes you through just tweaking a photo to very interesting effects.
